Autumn excites the fuck out of me. And I feel like it’s gonna be a good one this year.

On my mind lately:

I don’t understand why people just leave these on their doorstep and let them rot. For me, that’s food. That’s a loaf a bread. That’s beta-carotene that we all need.

Eat yr pumpkins! They’re squash!

1. Break off the stem + rinse the pumpkin

2. Slice it in half with a bigass knife

3. Scoop out the guts with a spoon and put them in a bowl so you can get at the seeds later (pepitas!)

4. Put a 1/2 inch of water in a glass pan/casserole dish/rimmed baking sheet, then put the two halves face down in the water so they steam + cook. OR Grease a baking sheet and cook face down for a little longer. The result is less moist but is good for savory dishes where you need chunxxx.

5. Stick it in the oven at 400 F for around 50 minutes if it’s around 4 pounds (small soccer ball sized), or until a fork pierces the flesh easily.

6. Take it out and let it cool on a cutting board or something by a window! The flesh will peel off easily with a fork/hands.

7. Puree it in a blender for pies and things! Mash it with a potato masher! Keep it intact and put things in the middle like corn or quinoa (you fancy motherfucker, you)! Slice it up in neat little squares to put in stir fry/pasta dishes! Feed it to your guinea pig!

(P.S. You can prep any squash like this. Seriously. The smaller, the less time you need, you know, so try a little acorn squash and stuff the two halves with delicious things when it’s done, and serve it for two!)
